Lick the Beater Peanut Butter Buttercream

My husband's favorite thing to eat is peanut butter. He will eat an entire container of peanut butter within three days and when I go to reach for it to make a sandwich, it's gone (or there's an empty container in the pantry).
Often when I make chocolate cake or cupcakes, I love using a peanut butter buttercream. It's smooth and creamy, and obvious the flavor combo is a hit. When I make this, my husband comes in the kitchen nonchalantly pretending as if he didn't know I was making this. Seconds later, the beater is missing from the mixer and his face is covered in buttercream just like a little kid's face would be. Well, not all over his face, but in his beard and mustache. :)
I do always take note to tell people when I am serving them something with peanut butter just in case there are allergies. With so many food allergies these days, you can never be too careful.
Here's what you'll need to make this:
- 4 cups of confectioners/powdered sugar
- 1 tsp vanilla extract
- 1/2 cup of room temperature unsalted butter
- 3/4 cups of creamy peanut butter
- 3-4 tbsp of milk (use more of less for desired consistency)
Here's what you have to do:
1. In a stand mixer or with a hand-held mixer, place vanilla, butter, and peanut butter in bowl and mix until all well creamed together.
2. Add in one cup of confectioners sugar at a time. If you're using a stand mixer, don't get cocky and drop in all 4 cups at once; it WILL go over the edge and you WILL get covered in confectioners sugar... so will your countertops and your floors and your dog if he/she stands under you like mine does.
3. After 2 cups of the confectioners sugar have been added, add in 2 tbsp of milk. This will help everything come together well. Then continue adding the remaining two cups of confectioners sugar.
4. Add in a bit more milk to get the consistency you desire. If you're piping with this, then you will want a stiffer consistency, so less milk. If you're spreading it on a cake, you will want a medium consistency. If you want to drizzle this into ice cream or right into your mouth, you may want a thin consistency, so add more milk.
If you melt the butter in the microwave, it will make your buttercream look grainy; it will still taste delish though.
If you're going to cover a cake or cupcakes with this, please ensure they are fully cooled, otherwise, it will be a tasty mess.
You can color this buttercream, but it's already brownish from the peanut butter, so you may not get vivid colors other than a darker brown.
