Today, I woke up craving a chocolate chip muffin. I seriously considered driving out to the local grocery store just for the tasty treat, but then realized I had everything I needed at home to make my own batch!
A lot of my recipes have chocolate in them. I mean, is there anything better than chocolate? But seriously, it adds a great flavor too pretty much anything and it increases the levels of serotonin in your brain, so you feel happier when you eat it. Some studies even show that eating chocolate kills bad breath, which everyone has when they first wake up - so give a muffin to your significant other before they even speak in the morning! LOL
In efforts of trying to be healthy, I made some alterations to a previously used recipe and I must say, these are super good! I may just have 2!
Here's some tips before I get into the recipe...
1. Add the flour and milk last and once all the flour is in, try to mix as little as possible to get that flour incorporated. Don't over mix the gluten!
2. Use cupcake liners to save yourself the time and hassle of greasing each individual cup.
3. If your baking powder is older than 6 months, then toss it and buy a new one. Powder is what's going to make these beautiful muffins rise.
Here's what you'll need to make this recipe:
- 1/4 cup unsalted butter, soft (can be partially melted if you're impatient like me and stick it in the microwave)
- 1/4 cup unsweetened applesauce
- 3/4 cup granulated sugar
- 2 eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 cups all-purpose flour
- 1/2 cup milk
- 1 cup semi-sweet chocolate chips
Here's what you need to do:
1. Heat your oven to 375 F. Line a cupcake pan with 12 liners (you can grease and flour if you prefer, but for me, that takes too long)
2. In a medium bowl or in stand mixer bowl, add the butter, sugar, applesauce, and vanilla. Let them cream together well. Then add in the eggs.
3. Add in the baking powder, salt, and 1 cup of flour. Mix just until incorporated, then add 1/4 cup of milk. Then add the final cup of flour, mixing just until incorporated, and finally the remaining 1/4 cup of milk. Alternating the mix and flour helps the dough come together better.
4. Fold in chocolate chips - you can do this with a rubbed spatula or put your stand mixer on low for just a few seconds.
5. Using an ice cream scooper or a spoon, fill the cups about 2/3.
6. Bake in the preheated oven for 17-23 minutes. Baking times vary on oven. I used a convection oven and they were done in 17 minutes. They may take longer in a standard oven.
