The title says it all. Who needs box mix when you can make a deliciously fudgy brownie with ingredients you already have in your kitchen? And let me tell you, these are SUPER rich. They pair well with vanilla ice cream and some strawberries, maybe even a dollop of real whipped cream on top. These are so good that they don't even need frosting! But, I will say that you will be tempted to keep reaching for another brownie every time you walk into your kitchen.
Have a glass of milk handy!
Here's what you'll need:
- 1/2 cup of unsalted butter, melted
- 3/4 cup of granulated sugar
- 1 tsp of vanilla extract
- 2 eggs (use three eggs if you like cakier brownies)
- 1/2 cup of cocoa powder (any brand works well)
- 1/2 cup all-purpose flour
- 1/4 tsp baking powder
- pinch of salt (less than 1/4 tsp)
- 1/2 cup of chopped walnuts (these are optional)
- 1/2 cup of semi-sweet chocolate chips (these are optional, too, but they make these brownies so chocolatey delicious)
Here's how to make these delicious brownies:
1. Heat your oven to 350 F. Spray a 8"x8" baking dish with PAM for Baking (or you can grease and flour the pan)
2. Mix all of the ingredients except the walnuts and semi-sweet chocolate chips in a medium bowl. Once all of those ingredients are combined, gently fold in the nuts and chocolate chips.
3. Bake in prepared pan for 15-20 minutes (baking times will vary based on oven)
I've tried putting less sugar in these brownies to try to make them a little healthier. They're still good at 1/2 cup of sugar, but definitely a darker chocolate type taste.
If you do decide you want to frost these brownies, I HIGHLY recommend a peanut butter buttercream for the top (see Lick the Beater Peanut Butter Buttercream). You'll want to ensure the brownies fully cool before adding on buttercream, otherwise, you'll have a melty (but really tasty) mess.
Adding some chocolate chips on top of the buttercream would be a nice little addition too, just sayin...
